For our first field trip of the year, we headed up the road to RISE UP COFFEE ROASTERS in Easton, MD. The LDC crew spent the morning with the team at Rise Up learning about their approach to coffee: the origins, profiles, and characteristics of the many varieties of coffee, as well as the roasting process. Noah, co-owner & head roaster, led us through a nosing & cupping an array of coffees, including beans that were aged in one of our rum barrels. We observed (read: ooh’d & ahh’d) as Mike & Mark roasted the beans for our next batch of Lyon Coffee Rum Liqueur, explaining their techniques. When we developed our coffee rum recipe in 2016, we chose two specific coffees: the organic Las Lajas (Costa Rica) & Chajulense (Guatemala) – which together deliver ideal notes of chocolate, ripe fruit, and rich flavor when infused into our rum. Rise Up carefully cultivates relationships with farmers, cooperatives, and visits the farms, ensuring quality from season to season.
